Email 2.0 - still working in 1.0

We were recently converted to email 2.0 an our LeadMD consultant assurred us that we could still work in our 2.1 templates. However, there doesn't seem to be a way to edit the associated text version of our emails as the html code is brought directly into the text version. Is there any way around this?

Can you un-check the "Automatically Copy from HTML" box and update both versions when editing the copy?
