Converted leads in SFDC with owners no longer at company

I've run into a problem where I'm using the lead owner variable to populate sender name, send email, signature, etc. The problem is, some of these lead owners are no longer with the company.

It's my understanding that once a lead is converted in SFDC, their lead data is essentially locked down and can't be modified--so I can't change the owners. Has anyone run into this situation and/or found a solution?

If that field isn't on Contact and isn't mapped during conversion, then you cannot edit it after conversion.

I don't think it's possible to update lead data once it's converted in Salesforce.  From my research, this sounds like a platform restriction on the Salesforce end:

For some reason I thought the owner was locked down also, but it looks like I can indeed still transfer the owners. Thanks!
