Can I modify the fields I see in my Watch List?

For example I'd like the "Title" or "Job Function" field to be displayed.

Paul,

I don't believe you have the ability to edit those fields. Closest thing would probably be to create a lead view, though Watch List isn't a field you can pull from there. You could, however, create a custom workflow to replicate this functionality in SFDC.
