Adding Form Fields

If there is a form field that is not available on the list within the form builder, is there a way to add more?

Yes, you can add more custom fields through Field Management section on the Admin section. Also, if you are using SFDC and the sync. is enabled, you can create your custom fields in SFDC and they will be automatically created in your Marketo as well.
