Ability to format Date Token
Currently, our Date token produces the following format in our emails: 2016-06-30
It would be ideal to be able to set the format ourselves as this is not a common format in the U.S. and is not customer friendly.

Fully agreed. This currently takes some velocity scripting, and it is really not friendly.
It should work more or less the way one can insert merge fields in MS Word, meaning the formatting would apply at rendering.
{{lead.date of birth:default=edit me:format="DD/MM/YYYY"}} for instance.
