Mapping data elements

I've inherited an AA implementation and cannot find in Launch the mapping between the data elements and their relative variables. They are mapped somehow, as the data is available in Workspace. However, in the AA extension in Launch, I see no such mappings as expected. The documentation provided also states this is the expected mapping method: 

"In the Global Variables tab of the Analytics extension map the data elements created above to the relative variables."

However, the global variables is mostly empty, but there are dozens of custom Evars available somehow. What is the issue here?
