Rename Folder title in AEM Assets Touch UI

Yes! Moving page and renaming it from Classic UI is good option.

Yes! 

I created a folder in Touch UI - it was created - but still not displayed. There are issues in 6.1 - so yes - a ticket is the way to proceed. In meantime - use Classic UI - it works nicely -- http://localhost:4502/damadmin

Tested on AEM 6.2, it is working fine.

You need to select Folder Setting to change folder title. For changing name it could be done by move operation.

In 6.1 also i can do the changes.

Select the folder (click the Select option on header) -> click to "Folder Settings" -> change the title....  It is working fine.

Hey thanks it works. It was a miss, didn't expect this option hiding in folder settings.
