How robust and stable aem will be if we use single author instance for multiple different publishing environments

+1, this is very common in the real world. Make sure you put dispatchers in front of the publish-instances.

That's common use case & implemented in many implementations.  Engage with consulting architects & should be able to design & verify based on your requirements.
