How to create catalog with custom rollout config set for product pages in AEM Ecommerce?

I have to set custom rollout config for all product pages that will be created using AEM commerce catalog generator.

By default AEM sets rollout configuration as catalogpagecontent and catalogrollouthooks for all pages using catalog generator.

Any related document will be helpful to check for overlay or customization.
