Hi,

There is still documentation that needs to be updated to demonstrate using Touch-optimized UI instead of Classic UI.

However, you can use either UI for the basics of selecting a site, creating a new page, selecting a template, and adding components. 

For an example of using the Touch-optimized UI, you can visit
