well then "Standard Dimensions" vs "Custom Dimensions" doesn't really cover what you are asking... since there are many different types of Standard and many types of Custom dimensions.
1. Standard Dimensions include basic "prop like" dimensions like
2. Extending from "prop" like (i.e. Hit level), you have your hierarchy dimensions (in some documentation listed as deprecated, these are still fully functional and do work in Workspaces...), of which you can have up to 5... these can hold up to 10 Levels of "drill down" classification data
3. Then you have standard dimensions that are "eVar like" such as:

Next you have the complex eCommerce dimension, of which you have only 1 like it... the product dimension... this is a complex dimension that allows you to pass each product category, identifier, quantity, price (which will be calculated against the quantity to add to your Revenue metric), the for each product you can pass multiple custom events and multiple custom eVar values to allow you to provide much more in-depth information about the product, or how people found it or multiple different uses.
Now, moving onto Custom Dimensions:
1. Props - these are custom properties.. these are set on the hit and only apply where they are set
Props can also be configured to as "lists" (multiple values that will automatically split on the selected delimited, so that each value will be shown in isolation of one another in the reporting) but due to the limited character count available (100 characters) you must be careful when using them or risk data truncation
2. eVars - the are custom conversion dimensions, but due to the increased characters count (255 characters) and the ability to control the expiry, these can also be used the same way as a prop.
eVars have a set expiry, the default is "Visit" but, depending on what the use is, you often want to change that to Hit (to work like a prop), or set it to expire after something like a Purchase event, or nay number of expiry values.
Once the value is set, it will continue to count that value for the user until the expiry is hit (you won't see it in your server requests, but it's processed into each hit on the server level)... if a new value is set, that new value will continue to be set until the expiry

Lists - these are three dedicated eVar type dimensions that again allow a list of values to be passed and treated like individual value in the reports... like eVars, you can set a custom expiry... but unlike props configured as lists, a List dimension is not limited to a total characters count... each item in the list is limited to 255 characters each, but you can pass as many items as you need to this dimension
