I found an issue on this documentation page:

Step 7 references the transferConfigToTable method, but the specified file at /libs/cq/ui/widgets/source/widgets/form/rte/commands/Table.js does not contain this method. I found transferConfigToTable in /libs/cq/ui/rte/core/commands/Table.js and I was able to add the caption option successfully. This incorrect path appears in other AEM versions of this page (I checked 6-0, 6-1, and 6-2).
I also noticed that all top navigation links generate 404 errors (this is the case for at least 6-0 and 6-1).
