How "random" do you want it to be? If you want it to be absolutely pure random, I can't think of a slick way to do it just in workfront, where you'd run a report and it would display 1 project only purely based on a random pick. However, one "manual" option is to just run a report (or just do a view/filter) of all current projects (assuming you want to audit only current projects), and then just get the total number of projects. You could then just have an excel spreadsheet and type this formula in a cell - =RANDBETWEEN(1,n) (where "n" is the number of projects), and whatever number it gives you, take that number in your list and audit that one.
I'm sure there is a much slicker way to do it. Now, if it doesn't have to be purely random, there are other options (like maybe showing the projects sorted by the last update and you always pick the 7th one on the list, etc.)
