I never found out why this happened.  I now save each form I am working on in LiveCycle in two different locations, one on the server and one local.  It's a bit of a nuisance to Save then Save As, but I use shortcuts to make it a bit easier.  And it's not nearly as frustrating as losing hours worth ...

I have created a form using LiveCycle 8.0, which is usually filled out by others using Acrobat Pro 7.0.  When they save the form under a new name and then reopen it, all the text fields are empty but the selections in the drop-down lists are intact.  Other forms I have created don't have this issue....
