It could be to do with binding. Some of the options don't export. I know 'Use name' definately does export so that's a safe option.

The pattern you want to use is: EEEE, MM/DD/YYYY, h:MM A

You can put text into the Tool Tip box in the Accessibility palette for that.

In the Object palette make sure Embed Image Data is ticked.
