Can I change the background colour of a text field so that only the response element of teh field is coloured, for e
xample, I want the box where the user enters their response to show as white fill
but the field title to have no fill?

It's not that I want the field to change colour when text is entered. I
just want to be able to create a field that may be sitting on top of a
coloured shape but I want the field name to be transparent and the field
entry area to be, for example, white. Does that make sense?

Don't think you will be able to achieve the transparancy you are after .....but give it a try. You can change the appearance of th efield in the Object palette under the Appearance dropdown choose Custom. Then you can choose the background fill (at the bottom of the dialog).....first choose a style of background then choose the color using the paint can selectors.
