Are any of the LiveCycle apps...specifically Reader Extensions available for the Mac platform?

You can use "Reader Extended" PDFs on a Mac in Reader, there is no server based product that runs on a Mac.  LiveCycle is J2EE and runs on JBoss, WebSphere or WebLogic application servers.
