Attached is the sample

I would like for my dates to show as (e.g. Sunday - Jul 05) in the text fields, once a time period is selected from the dropdown menu.

Make your Fields actual Date and Time fields (this will bring the Calendar up). In the Validation pattern under the display tab choose this pattern:

date{EEEE, MMMM D}
