Change the fields that get tracked in a distributed PDF

I have been working on a pdf catalog, with a requestor information section and 6 different groups of items to be selected, which all get summarized at the very end. When I go to distribute this pdf, all of the fields are checked and grayed out. Which means, when I go to the generated responses pdf, all of those groups are represented, even though they are tracked in the summary field at the end. I just want to see the requestor's information (name, email, department, etc) and the summary of items at the end. Is there any way to uncheck those groups before distributing so that they aren't there in the responses pdf? Or is there a way to not see those fields in the responses pdf?
