Is Adobe Analytics able to record the 'scroll down' event?

Ideally, I would like to see how many times our visitors scrolling down from his/her visit.

If you can isolate the action or information, you can track it with Adobe Analytics.

For "scroll down" actions, I think you'll need some combination of the approach outlined in the Stack Overflow question found here and Launch's "Custom Code" event type:

That said, what question are you trying to answer? Is it truly just to know when someone "scrolls down"? Or, is there another purpose?

Ideally, I would like to see the time interval people scrolling down of the page. If this is not possible, I would like to have the times of scrolling down in a visit.

If you want to capture the "amount of time spent scrolling down," you'd have to build custom logic to first identify that a downward scroll has begun, noting the time when this occurs. Next, you'd need an interval to repeatedly check to see if the scroll action were still occurring. If it is, no action is taken. If the downward scroll action has stopped, you'd note the time, calculate the amount of time passed from the scroll start to scroll stop, then send that information to Adobe Analytics. (I'd probably capture the time in ms and send it as a numeric event.) That said, while this is technically possible, I'm struggling to understand what value - if any - this data would bring. I'd also caution that this sort of tracking could get very expensive, as you're likely to send a high volume of calls to Adobe. Going back to the "What business question are you trying to answer?" question, my recommendation is to really think through what questions you're striving to answer, and whether or not this is the right approach.

I read a paper recently saying that we are able to identity bots from their variance of scrolling down events. This is the reason why I would like to have a test.

I assume that you're tracking through Adobe Launch. In that case, look for the Time and Scroll extension.

I can't stop wondering how such questions may help business to grow?...

Maybe you wanted to understand how often the visitors scrolled the page(s) to a certain content block (in other words, viewed a promo or offer)?
