We can add attribute allowBulkEdit = "{Boolean}false" to exclude properties on pageproperties editor in bulkedit view.

I want to see the same behaviour for assets in metadataeditor, but attribute "allowBulkEdit" doesn't help.

How can I hide some asset properties on the metadataeditor with multiple asset's selection?

IIUC allowBulkEdit property is used in context of WCM (foundation page component) and not applicable for DAM metadata editor. Following metadata schema should be used to customise the metadata editor fields.
