It would be great to have the ability to preview delivery templates that use targetData using seeds where the targetData has been configured for the seeds without having to create a workflow.

This is a good idea. This is not something we have in our roadmap for the moment.

Agree. we have to use lot of JS in the email delivery to achieve this even though we have pre-defined functions on Adobe platform.
