As previous you cant directly classify them..

You could try copy Country metric to a new evar then classify it.

I have the below table which I want to classify using the country dimension. How can I go about doing it?

Country

Region

Algeria

EMEA

Austria

EMEA

Belgium

EMEA

Bulgaria

EMEA

Croatia

Unfortunately, you can't classify the Country (nor City, State, etc) dimensions.

I'm not sure if Data Sources could help you here, by setting a "Region" eVar based on the Country. https://experienceleague.adobe.com/docs/analytics/import/data-sources/datasrc-home.html?lang=en
